Another tip for vegetarians, esp. in Japan: in Japan you can buy canned and cooked ready to use soybeans and adzuki beans. However, if you cook them from dry, the cooking liquid from soybeans makes a great umami-rich stock.

The Koya dofu in the rice cooker part may be a bit unclear. Just put the dried out-of-packet koya dofu in the cooker with the water and u cooked rice and switch on. Those brown spongy squares turn into white soft tofu!

Some freezing tips too. Yes you can freeze tofu! The tofu shown in the photo is frozen. Mushrooms (to be used cooked) freeze well also!
